I’m telling ya’, adding bran flakes to baked goods is truly magical.
They are not hefty – they are absolutely perfect. Everyone agrees.
Try this one: Chewy Peach Almond Bran Cookies.

Chewy Peach Almond Bran Cookies

16 Tbs. butter, room temperature
1 cup white sugar
3 large eggs
1 tsp. almond extract
1 tsp. baking powder
1 tsp. baking soda

1 tsp. ground nutmeg
1/2 tsp. sea salt
1 1/2 cup bran flakes cereal
3 1/2 cups all purpose flour
3/4 cup Peach Preserves

Cream together the butter and sugars until light and fluffy.
Whip in the eggs and almond extract.
Add the baking powder, baking soda, nutmeg, and sea salt and beat again.
Fold in the bran flakes and the flour, mixing very, very well.
Fold in the peach preserves.
Chill the dough for 30 minutes.

Preheat the oven to 375 degrees.

Line cookie sheets with parchment paper and place 1″ balls of dough on the sheets and bake for about 15 minutes.

Cool for 10-15 minutes before transferring to a cookie plate!
