A childhood favorite, but rarity in our house, this Frito Taco Salad has all the elements of goodness: seasoned taco meat (of course), guacamole, sour cream, salsa, a few olives, lettuce, lots of cheese, and crunch Frito corn chips! Pretend it’s Taco Tuesday and treat yourself!

Frito Taco Salad

1 lb. ground pork
3 Tbs. taco seasoning
3 Tbs. catsup

1/2 cup homemade guacamole (avocado + salsa + cilantro + sea salt)
1/2 cup sour cream
1/2 cup fresh salsa
2 Tbs. black olives, chopped
2 cup Fritos corn chips
2 cups romaine lettuce, finely chopped
2 Tbs. fresh cilantro, chopped
1 cup cheddar cheese, grated

In a large Dutch oven, brown the ground pork and break apart with the back of a wooden spoon.
Season the taco seasoning and catsup.
Stir until all is coated and well combined.

Toss together the seasoned taco meat with guacamole, sour cream, salsa, olives, corn chips, and salsa.
Top with fresh cilantro and cheese to serve.

Comfort food at its best. Be sure to serve with an ice cold margarita!
