Linene, one of my favorite people on the face of the earth, came over and shared that she had tasted and purchased an amazing Green Chile Cheddar Bread at the local farmer’s market.
What a great idea, I thought.
Thus, I can thank Linene for the inspiration to this outstandingly delicious, spicy, and satisfying Green Chile Cheddar Rustic Artisan Bread!

Green Chile Cheddar Artisan Bread

1 1/2 cups warm water
1 1/2 tsp. dry, active yeast
1/2 tsp. sea salt
3 1/2 cups all purpose flour
4 oz. mile (or spicy, depending on your palate) green chiles, diced
4 oz. shredded sharp cheddar cheese

1 Tbs. olive oil
1 tsp. freshly ground black pepper

Combine the water and yeast and let sit in a large bowl for 10-15 minutes, until the yeast blooms.
Add the sea salt and flour, as well as the olive oil, green chiles, and cheese.
Stir and combine well.
Cover with a kitchen towel and allow to rise for at least 2-3 hours.

Transfer to the fridge and chill overnight.

Preheat the oven to 425 degrees.

After chilling overnight, remove from the fridge and form into a nice boule.

Place on a parchment lined baking sheet and allow to sit and rise for at least 60 minutes, while the oven preheats.

Top with freshly ground black pepper.

Bake for 35-40 minutes, until golden brown.

Remove from the oven and cool for 20 minutes before slicing, slathering with butter OR guacamole and consuming quickly. Enjoy. Savor. Indulge.
