I really, really wanted to bake some vegan, gluten-free granola bars. But, I wanted them to be both sweet and savory. I wanted these bars to be stunningly perfect.
I LOVE sweet and savory.
And, I love granola AND I love parmesan. (One of my favorite indulgences: Parmesan Granola, just an FYI).

Well, as you, my vegan friends know, plant based cheese doesn’t always act the way dairy cheese does – particularly parmesan. This can be read as: it doesn’t melt.

So, my idea of chewy granola bars, baked with goodness into every bite – morphed into a super delicious Sweet & Savory Granola Crunch. Remember, it’s vegan and gluten-free and SO amazingly amalgamated. You’ll love it – no matter what your “diet identification.”

Vegan, Gluten-Free, Sweet & Savory Granola Crunch

3 cups oats (gluten-free, of course)
1 cup chopped pecans
1 cup golden raisins
1 cup flame raisins
2 cups vegan parmesan cheese (shredded)
3/4 cup maple syrup
1 tsp. sea salt
1/2 tsp. ground cinnamon

Preheat the oven to 400 degrees.
Mix all the ingredients together, tossing well and evenly.
Transfer to a parchment lined 9″x13″ baking pan.
Bake for about 40 minutes, until the raisins begin to blister
Cool completely before slicing (if you can and your cheese melted or you’re using dairy cheese) or tossing and serving.
