I truly believe this to be a fantastic combination of flavor – despite the fact that sun-dried tomatoes are still “so ’90s.” That’s okay, we’ll enjoy them here anyway – Sun-Dried Tomato & Beef Basil Toast.

Sun-dried Tomato & Beef Basil Toast

1 lb. lean ground beef
1 small shallot, minced
8 oz. oil packed sun-dried tomatoes, drained
8 oz. mascarpone cheese
sea salt and pepper

4 slices sourdough bread, toasted
1/4 cup feta cheese, crumbled
2 Tbs. fresh basil, finely chopped

In a large Dutch oven, brown the beef until the fat begins to render. Break up the large pieces of beef with the back of a wooden spoon or spatula.
Stir in the chopped shallot, cover, and simmer on medium heat until the shallot begins to soften.
Stir in the sun-dried tomatoes and mascarpone. Season liberally with salt and pepper.
Once the meat is thoroughly cooked, serve over toasted sourdough bread with crumbled feta and fresh basil.
