We recently visited a local Korean joint in town for a “family” dinner – with the friends who we consider family.

Although slaw is no where near a Korean favorite…it kind of is.
It’s kinda like kimchee…cabbage – and with a hint of ginger, this salad is “da bomb.”

Creamy cashews, sweet cabbage slaw, and a punch of ginger salt.

Vegan Cashew Ginger Slaw

Cashew Mayo:
1 cup cashews, soaked 1-4 hours
1 large lemon, peeled, sliced, and seeded
1/4 tsp. + Hampton Salt Co. Artisan Sea Salt Ginger
2 Tbs. apple cider vinegar
1/4 – 1/2 cup water, as needed to blend

In a small blender or immersion blender with cup, blend all ingredients until smooth and creamy.

Slaw:
3 cups finely shredded cabbage
1/2 cup chopped cilantro
Hampton Salt Co. Artisan Sea Salt Ginger

Toss together the slaw with the desired amount of mayo. Top with chopped cilantro and ginger salt.

Yes, it’s that easy.
