Wild rice stuffing is an easy gluten-free side dish (or main dish) that simply completes the holiday table.  It has all the classic stuffing flavors without the filler!  Vegan Big Mountain Foods sausage (OMG, so delicious), onions, dried cherries, toasted hazelnuts, acorn squash, wild rice, and sage – it’s all happening here, on this side of the border.

You’ve got every flavor profile of which you can dream with this gluten-free Vegan Sausage Cherry Hazelnut Acorn Wild Rice Stuffing.

Vegan Sausage Cherry Hazelnut Acorn Wild Rice Stuffing

3 Tbs. vegan butter
1/2 yellow onion, finely chopped

2 stalks celery, finely chopped
sea salt and pepper
1 medium acorn squash, seeded and chopped into 1/2″ pieces

1 links Big Mountain Foods Big Brat Veggie Links, chopped
3/4 cup toasted, chopped hazelnuts
3/4 cup dried cherries
2 Tbs. fresh sage, chopped

1 cup wild rice
2 1/2 cups vegetable broth

In a large skillet, melt the vegan butter over low heat.
Once warm, add the the onion and celery and sauté for several minutes, until soft and translucent, about 3 minutes, stirring constantly. Season with generous portions of salt and pepper.

Add the chopped acorn squash and Big Brat chops, coating with vegan butter, and sautéing, covered (stirring occasionally) for about 5 minutes. Make sure all surfaces are caramelized and browned.
Nest, add the nuts and cherries, browning, toasting, and coating with the vegan butter. Add more vegan butter, if necessary. This should NOT be dry.

Meanwhile, in a separate pot, bring the broth to a boil and add the wild rice. Reduce to a simmer and cover most of the way, cooking until all the liquid has been absorbed.

Mix the cooked wild rice into the vegan sausage cherry hazelnut mixture and stir in the fresh sage.

Serve, plated with extra sage and nuts for garnish – as a side or as a main dish for this spectacular holiday season!
