Sourdough bread is one thing. Fermented and frisky, with a gut-healthy, 100 year-old heirloom starter, we all love it!
And, pumpkin spice bread is another thing.
Yes, it’s that season. It’s beyond that season now.
Pumpkin spice EVERYTHING!!!! – even sourdough bread!

Mostly savory and tangy, but just a little bit sweet, the warm sentiments of candied ginger and pumpkin spice with a zing of sourdough create the most gorgeous and truly delicious pumpkin bread you’ve ever witnessed. Oh, and the chewy exterior of this gem kinda makes you feel like you’re eating a bagel, right in the heart of NYC.

Ginger Pumpkin Spice Sourdough

1 14oz. can pumpkin puree
1/2 cup homemade sourdough starter
1 large egg
1/2 cup white sugar
4 Tbs. butter, melted
1 Tbs. pumpkin pie spice
3 tsp. dry active yeast
2 tsp. sea salt
4 1/2 cups all-purpose flour
1/4 cup candied ginger, diced

1 large egg, beaten
1 cinnamon stick

In a large bowl, whisk together the pumpkin, sourdough starter, egg, sugar, melted butter, pumpkin pie spice, yeast, and sea salt.

Fold in the flour, 1/2 cup at a time. Mix until the dough comes together well. Knead for 3-5 minutes, until the dough is smooth and bouncy.

Cover loosely with a towel. Allow the bread dough to rise for 2-3 hours.

Next, with floured hands, punch down the dough, kneading again, for about 3 minutes.

Divide the dough into thirds (or maintain one large loaf). Form each division (or whole) into a boule dough ball.

Preheat the oven to 350 degrees.

*OPTIONAL: Using oven-safe twine, wrap each little loaf 3-4 times to create indentations, like a fresh pumpkin.

Transfer the little loaves (loaf) to small parchment lined pots or baking dishes.

Brush with beaten egg.

Bake for 45 minutes, or so, until the tops of the loaves begin to brown.

Remove from the oven.

Cool for 20 minutes.

Cut away the kitchen twine and place a cinnamon stick in the center of the bread mound to truly create the look of a little pumpkin!

Slice and consume immediately – still warm. Slather with salted butter or (OMG 🤤) coconut butter!
